Property: Colorless or white crystalline powder. It has a sweet and sour taste, slightly soluble in water, easily soluble in dilute acid, alkali solution and borax solution, insoluble in acetic acid and ethanol. The specific gravity is 1.984.

Uses: As analytical reagents, buffers, reducing agents, etc., used in seasoning, food processing, electroplating, and pharmaceutical industries. It is called tartare powder by the food industry and is mainly used as a leavening agent.
